Chocolate Lava Cakes

I keep seeing these Domino's Pizza commercials where they have this new molten lava cake for sale. Never one to back down from a culinary challenge, I thought I would find a recipe that I could copy. I'm going to try making the cakes from the video below. I'll let you know how they come out.

Yea! A second Brewpub is opening up in town...

It's about friggin' time... Freetail will be closer to me so I'll probably be frequenting it more than the other Brewpub in town, Blue Star.

25 Best Beers In America

Men's Journal has come out with their 3rd annual 25 Best Beers in America. Sadly, I have only tasted one on the list, #16 Sam Adams Black Lager which was damn good BTW.

Update 08/04/07: I was able to taste two more beers, #2 Dogfish Head 60 Minute IPA
and #5 Avery Mephistopheles' Stout. Dogfish IPA was awesome but the Avery was a bit too sweet for my taste. I prefer my stouts with a coffee or bitter dark chocolate taste to them.

Ceviche

I had the most awesome ceviche this past weekend. we went to this trendy Latin restaurant here in town and man was it ever good! The restaurant serves over 100 different rums! I had a Mt. Gay XO Barbados on the rocks, that was totally worth the $16 for the shot. Back to the Ceviche, I ordered the seared tuna ceviche which was delicious. Of course this was a culinary challenge that I had to face. So I tried it at home.

Here is my recipe for Yellowfin Tuna Ceviche:

1 1/4 lbs Yellowfin Tuna
1/4 cup Lime Juice
1/4 cup Lemon Juice
1/4 cup Texas Rio Red Grapefruit Juice
2 Roma Tomatoes diced
1/4 cup Cilantro chopped
1/4 cup diced onion
1 Clove Garlic minced
Sea Salt & Freshly Ground Pepper to taste

Mix everything and let it mariniate in the fridge for about 1-2 hours. Serve with Tortilla Chips and ice cold Mexican Beer (preferebly Pacifico Clara or Negra Modelo). Thank me later...
